I’ve recently started writing for American University’s Intern Blog about my experiences both as an intern at Amnesty International as well as an intern in general. In addition to making chocolate cookies with caramel centers this week (aka Rolo cookies), I branched out from my usual choice of chicken (or pork) with veggies stir fry for dinner and made white cheddar mac and cheese with broccoli. No picture because I forgot to take one, but it was very easy to make and it was delicious, too. Bonus points for the addition of broccoli. I used this recipe from Craving Chronicles and I’m definitely going to be making it again soon.
Whenever I have successes with new recipes in the kitchen I wish I had time to cook more, and to be more adventurous in the kitchen. However, when one’s a student with multiple commitments and a tight schedule, I guess I should just be happy that I can find the time to cook on most nights.
Speaking of recipes and cooking, anyone have food blogs they’d recommend? Food blogs are how I get the majority of my recipes (I have tons bookmarked on my computer) and I’m always looking for new food blogs to follow!
